Sullivans Cove Double Cask is the winner of Best Australian Single Malt at the World Whiskies Awards 2018, remaining non-chill filtered and free from additives.

This single malt whisky is aged in a combination of French and American oak casks, with each small batch showcasing the unique characteristics of both styles.

With incredible complexity and length, Double Cask offers a rich palate of sweet malt, dried apricots, honey, and freshly baked bread.

Batch DC0101 is a blend of portions from six different casks, aged between 11 and 20 years.

In addition to whisky matured in ex-Bourbon American oak casks, this batch also contains whisky from American and French oak casks previously used for Tawny, white wine, or red wine.

Description

Tasting Notes


Nose : Panforte (Italian Christmas dessert) and blackberry ice cream. Soft and warm, broad and rounded. Buttery pastry and shortbread. Date molasses. A milkshake-like aroma with chocolate, banana, and caramel. Bush honey, fresh coconut. Waxy. Dried mango and passion fruit stand out. Malted chocolate powder (like Ovalteenies). Black pepper and fresh beans.

Palate : Plum blossoms, raisins, orange zest, baked apples. Beautiful texture, becoming quite thick. Apricots and coconut. Very dark caramel flavor. Shortbread and a hint of rye bread. Fine tannins.

Finish : Grapefruit peel. Soft and expansive, filling the palate. Confectionery notes, cola, white chocolate, and coconut flower sugar. Fairly herbal – bay leaf. Hazelnut. The tropical notes remain, especially ripe mango. Stewed pears and warm cherries. The texture is incredibly long, beautifully coating the entire palate.
