Tasting Notes
Colour : Greenish gold.
Nose : Unctuous, concentrated. The very original first nose is characterized by notes of chlorophyll-flavoured chewing gum. It is also wonderfully malty and quickly develops an abundantly fruity (pear, yellow melon, kiwi), floral (lavender, lily of the valley) and herbaceous (green apple, nettle, clover) register. Allowed to breathe, candied lemon, cane sugar and porridge bring lots of consistency to the aroma palette. A beautiful increase in power.
Palate : Vibrant, elegant. Beaming with freshness, the attack reveals sophisticated flavours of dried walnut, marron glace and jasmine tea. The very malty and yet rich (shortbread, pound cake) mid-palate gradually becomes increasingly spicy (cardamom, coriander, cinnamon). At the end of the palate, cocoa bean and coffee bean pair perfectly with a very delicate wood.
Finish : Long, fresh. The marvellously liquorice start of the finish returns to the fruits found on the nose, especially WilliamĂs pear and green apple, which appear alongside candied lemon and ripe banana. The mentholated, spicy (star anise), vegetal (tobacco) and honeyed retro-nasal olfaction is a fourth stage in the tasting in its own right. The empty glass reveals a surprisingly youthful spirit.
