Tasting Notes


Nose
: Aromas of cider apples, citrus (grapefruit), dried herbs, wild mint. The present wood remains discreetly in the background, with notes of cinnamon and licorice.

Palate : The attack is frank, with great liveliness and freshness. Lots of body and texture. Very complex aromatics with acidic flavors of apple sauce that slowly evolve towards a more pastry register: hints of cocoa, chestnuts, preserves, spices, ginger. Then appear successively aromas of honey, flowers, vanilla, to finish on flavors of roasted coffee and toffee: a true wheel of flavors.

Finish : The finish is long, warm, with notes of spices and licorice returning to cooked apples in butter.
